  • 2 tablespoon melted coconut butter

Instructions

  • Preheat oven to 375 degrees F and line a baking sheet with parchment paper. Keep aside.
  • Thoroughly whisk the egg replacer and warm water together till the mixture gets a bit foamy. Add mashed bananas, milk, and pure vanilla extract to the egg mixture in a large bowl. Combine with a hand or stand mixture.
  • Take all dry ingredients together and mix in a trifle bowl until well incorporated. Add this into the wet mixture and combine until smooth.
  • Add shredded carrots and raisins and mix to incorporate. Keep aside for a couple of minutes to thicken up the mixture slightly.
  • Use 1/3 cup of the mixture and form a ball, roll it to lengthen a bit and then press it to get a bar shape about 1/4 inch thick. Make all bars similarly.
  • Bake for 22-25 minutes or until an inserted toothpick comes out clean. The bottoms of the protein bars should turn golden and the tops should be cracking slightly.
  • Cool on a wire rack and serve.
