How To Make The Low Carb Strawberry Pound Cake

STEP 1: Using a stand mixer or a large bowl with a hand mixer, cream together the erythritol and butter.

STEP 2: add the cream cheese in chunks and mix until creamy

STEP 3: add the 6 eggs one at a time and then add the vanilla extract until combined

  • STEP 4: stop the mixer and scrape down the sides to make sure everything is fully incorporated. Then slowly add the almond flour and baking powder with the mixer on low/medium speed, onced mixed through increase speed to high for 1 minute. Scrape down the sides once again and then mix on high speed for another minute. At this point you can add the optional coconut extract if you wish to use it.

STEP 5: Fold in the chopped strawberries and place batter in an 9″ well greased loaf pan. Bake at 350 °F for 60 minutes, turn the oven off and allow to sit in the oven for another 10 minutes. You will know it’s ready when you poke the cake with a toothpick and it comes out clean. Times may vary according to your oven.

STEP 6: for the glaze, using a whisk, mix the erythritol, coconut milk and vanilla in a medium bowl until mixed through.

STEP 7: once cake is done, remove from the oven and allow to cool completely before removing from the load pan. Otherwise it may fall apart. Then brush on two coats of the glaze and sprinkle the top with unsweetened shredded coconut.

Since its my birthday today, I wanted to celebrate with a pretty birthday cake. I actually made the cake yesterday and since I had all of the other recipes ready I only had to concern myself with preparing and assembling the cake.

Ive made homemade birthday cakes for my family for over twenty years. Its something I really enjoy. Eight years ago I started baking gluten-free low carb birthday cake recipes. They arent any harder to make than regular cakes and I enjoy them even more. Maybe youve seen the low carb chocolate birthday cake or the low carb peanut butter chocolate birthday cake I shared last year? They were fun.

When I first began my low carb journey I wasnt sure I would ever eat baked goods again, let alone sugar free cakes. That changed the moment I saw the beautiful cover photo of Elana Amsterdams cookbook, The Almond Flour Cookbook, which featured a chocolate almond flour cake. I knew then, that enjoying the occasional low carb keto treat would be possible.

This is the first time I have shared a gluten-free low carb birthday cake recipe that was vanilla, although I do have a nice recipe for vanilla cupcakes. I usually post low carb chocolate cake recipes just because low carb vanilla cakes made with almond flour and coconut flour are so dark in color. Theres no way around it really. Of course, I could have used a cheaper butter and egg whites instead of whole eggs, but I didnt.

One Of The Best Low Carb Desserts For Any Occasion

Despite the conflict between the name and the fact that I had family coming for New Years, I made this sex in a pan dessert for the celebration. I wanted something that looked cool, tasted extra rich, and it had to be something I wouldnt make every day.

Fortunately, even with multiple steps, it turned out to be a lot easier than it looks! And, the rave reviews were worth the effort.

Ill admit, I couldnt bring myself to tell my family what this thing was called. And they did all ask, because it doesnt look like any other dessert people have seen before. I just said its chocolate layer dessert. Feel free to do the same if youre in the same boat!

You may be wondering why Im sharing this chocolate layer dessert recipe now, toward the end of January. Isnt this month supposed to be all about healthy eating for many people? Well, yes. But like I said, this low carb dessert is definitely healthier than traditional sex in a pan.

The other reason is, Valentines Day is coming up! What better time than that to make this sugar-free sex in a pan dessert? Its special, its chocolate, and you wont have to come up with an alternate name like I did.

Ingredients For The Best Keto Birthday Cake

All the ingredients in this gluten-free yellow cake are easy to find at your local grocery store or you can order them online. Im sure that if you made any of my other recipes, youre familiar with my easy keto dessert recipes that are super easy to make and super delicious.

Youll be impressed by how few ingredients are needed for such a fancy cake:

  • Keto Flours I always use a mix of almond flour and coconut flour as they complement each other and deliver that fluffy and airy texture. I suggest using both of these flour without trying to make any substitution. Choose superfine blanched almond flour to make this almond flour vanilla cake. If possible, sift the flours before use.
  • Unsalted Butter Make sure to use unsalted butter and add only a dash of salt as this is a low carb dessert, and salted butter would overpower the sweet taste. If youre looking for a dairy-free keto cake replace butter with melted coconut oil or avocado oil.
  • Sweetener I used Erythritol in this cake, but Monk Fruit sweetener or Allulose work as well. These are my favorite keto sweeteners that dont have any aftertaste and taste similar to sugar.
  • Eggs Use room temperature large eggs
  • Vanilla Extract I highly recommend using high-quality pure vanilla extract to make this cake taste heavenly.
  • Baking Powder works as a leavener and helps the cake rise and become fluffy.

This Low Carb Strawberry Pound Cake has a deliciously rich flavour that is moist and tender through every bite. Nobody will know it’s a low carb, sugar free cake.

The fresh strawberries in this cake make the flavours multiply tenfold than a normal pound cake. Using almond flour and erythritol make it low carb and diabetes friendly. You might also like my Strawberry Cream Pie recipe.

A Easy Sex In A Pan Recipe

An easy sex in a pan recipe is a challenge when you are trying to keep it to real food ingredients and somewhat healthy. Im not going to lie, its definitely calorie dense and on the heavier side. But, at least there are no artificial ingredients. And, its still pretty simple to make no processed pudding mix required!

The other aspect I struggled with was keeping the sex in a pan recipe under ten ingredients total. After all, ten ingredients or less is my thing. Definitely not easy with a six layer dessert!

Fortunately, I was able to repeat many of the ingredients among the different layers, so it worked out. It actually came out to nine ingredients, although my original version had ten.

I skipped the vanilla pudding layer, because patience isnt my strong suit. Waiting for each layer to set already took long enough with five layers! Its totally worth it though, I promise.

Anyway, the other layers are so decadent that I dont think youll miss the one I omitted. If you really like vanilla pudding, feel free to add a layer of your favorite kind before the chocolate layer.

In fact, I was so determined to make this low carb dessert a little faster than traditional sex in a pan recipes, that I decided to modify the chocolate layer from the original.

The older version required making chocolate pudding using xanthan gum, and waiting hours for it to set. Some people reported issues with the pudding setting, and the xanthan gum was less readily available for many.

  • To store: Leftover sugar free birthday cake should be stored in the refrigerator, to avoid any potential spoilage. Keep the cake covered in a sealable container. It will keep well for at least 5 days.
  • To freeze: If you dont plan on eating the keto birthday cake within 5 days, freeze the leftovers! Place slices of the cake in a freezer friendly container, or in large portions. Birthday keto cake will keep well frozen for up to 6 months.

Low Carb Diabetic Chocolate Cake Recipe

Who said you cant enjoy a rich and decadent chocolate cake when youre diabetic?

This solo recipe takes less than 5 minutes to make and will rock your socks off!

Its 100% sugar free, using stevia for sweetener. In the picture its topped with plain Greek yogurt but you could also use whipped cream or coconut cream.

The cake itself is already moist but the topping combined with the chocolate syrup gives it that extra mouthwatering appeal.

  • 2TablespoonPlain Greek Yogurt
  • 1teaspoondesiccated coconut
  • 2TablespoonPlain Greek Yogurt
  • 1teaspoondesiccated coconut
  • Place all the dry cake ingredients into a small bowl, followed by the wet ingredients and stir well to combine.
  • Pour into a separate small bowl and put in the microwave on high for 1.5 minutes. The size of the dish you put the mixture in will dictate the shape of the cake.
  • When the cake is ready, remove onto a wire rack to cool.
  • Add the syrup ingredients to the bowl and stir to combine.
  • Top your cake with yogurt or cream and drizzle with the syrup and a sprinkle of coconut. This cake can be eaten hot or cold.
    • Add sliced fresh strawberries on top
    • Sprinkle with nuts

    How To Prevent The Almond Flour Cake From Sticking To The Pan

    Usually, keto cake batter made with almond flour sticks a bit more to cake pans, so it is crucial to use a non-stick high-quality, aluminized pan.

    It may sound expensive to invest in a high-quality pan, but they last for years. The one below is in my kitchen for 7 years, and none of my cakes stick to it.

    Pan choice

    I am using a 9-inch cake pan with a non-stick coating, removable sides that clamp around the base, and ridged texture at the bottom.

    Pan preparation

    If your pan doesnt have a ridged texture, your cake may stick slightly at the bottom. To prevent your keto cakes from sticking to the pan, I recommend a double-greasing method.

    First, grease the whole pan, bottom, and sides with butter or coconut oil. Then, cut out a piece of parchment paper, the same diameter as the pan, so here a 9-inch circle.

    Place the piece of parchment paper at the bottom of the pan. It will stick to the pan since you grease it before. Finally, grease the whole pan again, including the paper.

    This 2-step greasing method will ensure that your keto cake does not stick to the pan.

    For A Paleo Or Gluten Free Cake

    For a paleo cake, sweeten with either the erythritol option listed in the recipe or use 1/2 cup date or coconut sugar instead. The low carb cake recipe is naturally gluten free, no substitutions necessary. Its made with almond flour, which is simply ground up almond meal.

    • 1 1/2cupsfine almond flour
    • 1/4cupcocoa powder
    • 2tbspdutch cocoa or additional regular
    • 2 1/4tspbaking powder
    • 1/2tspsalt

    Spice Up Your Low Carb Cornbread

    The Low Carb Diabetic: Low Carb (Keto) Cake Recipes : Lime ...

    You can easily add a little spice to this low-carb cornbread recipe, by adding finely chopped jalapenos, or your favourite spicy pepper or 1/2 of a teaspoon of chilli powder. Some other suggestions for alternative flavour options are as follows:

    • 1 tbsp chopped jalapenos or chilli peppers
    • 1 tbsp chopped sun-dried tomatoes
    • 1/4 cup grated sharp cheddar cheese
    • 1 tbsp chopped fresh chives
    • 1 tbsp chopped black olives
    • 2 tbsp chopped onion and then fry before adding to mixture
    • chopped, cooked bacon
    • 2 tbsp chopped sunflower seeds
    • 1 tsp chopped fresh rosemary

    If adding chilli peppers or jalapeños, try adding some cheddar cheese, it is a great combination of flavours, especially if you are serving it with chilli.

    REMINDER adding cheese or other ingredients to this low carb cornbread recipe will alter the nutritional value of your bread. For most ingredients such as jalapenos or chilli peppers and spices, it remains the same but adding cheese or sun-dried tomatoes will affect the nutritional values.
